The daytime casual format. A play on words like “They Understand.” This is me in my simplest form. Cambodian flavors will be introduced through vehicles Americans understand – soups, sandwiches, noodles, rice dishes and maybe even tacos! Limited ala carte menu with the goal of selling out.

The evening elevated format taking those UNDERSTANDings from the DAY to rise UP AT NIGHT. A multi-course seated dinner (5-6 courses with a few surprises) comprised primarily of local seasonal ingredients and hyper focused technically ambitious cooking. Thoughtful food and an informally formal service executed across 3 hours. One night, one seating, 14 guests max.
